Sunday Supper Series – Pasta Salad with Sun-Dried Tomatoes & Smoked Mozzarella
Today’s Sunday Supper recipe comes from the kitchen of Meryl Drobbin, Commercial Lines Account Executive. This is the perfect salad for a BBQ or to bring to a potluck.
2 cups of pasta (my preference Campanelle or Cellentani shaped)
1 cup chopped fresh plum tomatoes
¼ cup oil
1 tablespoon red wine vinegar
Minced or chopped garlic from jar (amount of preference) or 1 garlic clove crushed
8 ounces diced smoke mozzarella
1 package of sun-dried tomatoes
Pinch of black pepper
*Cook the pasta until aldente
*Rinse off pasta so it doesn’t stick and put in refrigerator to cool off. *In large bowl combine the fresh tomatoes, oil, vinegar, garlic, mozzarella, sun-dried tomatoes.
*Add pasta once cooled off and toss.
*Add black pepper last and toss one more time.
**This is the original recipe, however I eye-ball and add enough mozzarella, regular tomatoes and sun-dried tomatoes to make it look even and colorful. I find the more the better. I also found that it tastes much better if made the night before. The pasta really soaks in the flavor of the cheese and the sun dried tomatoes when it sits over night.
